Well, after two weeks of eating everything in sight, it is time to get back into a routine. I always do better with a meal plan. There are two days of the week were we have activities that are perilously close to dinner time. Those are almost always crock pot meals, or made ahead and easily reheatable. The rest of the week is planned, but not assigned. There are two empty days for leftovers and or respite night.
So, here it is:
Monday: Split Pea with Ham soup and cheese bread
Thursday: Crockpot Italian Sausage Sandwiches
Roasted Vegetables with Lemon Couscous
Beef Stew with Dumplings
Chicken Croquettes with Spinach Mashed potatoes
